Peach Pepper Jelly

This is a fairly easy recipe and tastes great served over cream cheese and eaten with crackers or even over brie that has been warmed in the oven.

Ingredients:

1 cup chopped fresh peaches
3/4 cup chopped red bell pepper
1/4 cup seeded chopped fresh jalapeƱos (green or red)
2-1/2 cups cider vinegar
1 cup water
2 oz. package of dry pectin
6 cups granulated sugar

Directions:

  • Using a blender, blend peaches, peppers, jalapeƱos and 1-3/4 cup cider vinegar until finely ground.
  • Pour the mixture into a heavy bottomed pan.
  • Rinse your blender with the remaining 3/4 cup of cider vinegar and 1 cup of water, then pour it into the pan
  • Stir pectin into the pan and bring it to a full rolling boil over high heat. Stir constantly.
  • Add sugar. Continue stirring, returning it to a full rolling boil for 1 minute.
  • Remove the pan from heat and skim off any foam.
  • Ladle hot jelly into sterilized half pint jars.
  • Leave 1/4" head space in the jars and wipe rims.
  • Place hot lids on top of the jars with rings.
  • Proccess in a canner with boiling water for 5 minutes

Adventures in: Repurposing an Old Window

At a local market, I stumbled upon a repurposed window, that took on a new life as a chalkboard- cool, right? So of course I had to try my DIY hand at a similar project.

Mom had this old vintage window frame, that she had found years back that was originally a part of a building on my great-grandfather's farm.

As you can see, it was worse for the wear, and had chunk of it missing. I gave it a preliminary sanding job and off I went to Home Depot to pick up wood putty and a putty knife. I used the putty knife to build up the missing pieces and let it sit for 24 hours to dry. I then re-sanded the gem and built up some more areas that needed a bit more putty. Did I mention that this project took me days?

Eventually when it had all dried and was built up in all of the right places, I used my favorite $0.98 spray paint from Home Depot.

Once it had dried, I went to visit my grandpa to help me cut the metal for the top and bottom cut outs. When I cut out the cork board I realized that it was too thin, so I had to back it with cardboard. I then used a hot glue gun to put them in their places. It looks great in my laundry room!

Adventures in Sewing: Pillows

I recently got some new couches... did I mention that I LOVE them? I just didn't especially love the fabric selections the company offered for pillows. So I ordered plain ones that match the fabric of the couches and set myself to the task of making some of my own.

After hitting up Jo-Ann Fabrics (with a coupon of course!) I found home decor fabric (heavier than cotton) that coordinated nicely with the new rug that I purchased. I then measured the pillows that came with my couches, to see what the dimensions of my homemade pillows needed to be. Turns out they needed to be 20"x 20".

In order to get my finished pillows to come out to a whopping 20" x 20", I needed to add a quarter of an inch to each of the sides in order to account for a seam allowance. I traced this out on a piece of tissue paper, so that I could make a pattern. I then laid out the pattern and the fabric and cut out 8 pieces (this is so I could make a total of 4 pillows). To stiffen up my pillows, I also cut out 8 pieces of fleece interfacing.

I put the pillow fabric right sides together and then placed the fleece interfacing on the outside of that.

I then stitched around the edges using a 1/4" seam allowance, and leaving a 4" gap on one side so that I could turn it right side out for stuffing.

To make the seams lay more smoothly, I trimmed close to the seams and clipped the corners.

I then turned the pillows right side out and pushed the corners out to make them look more crisp. Then I repurposed fiber-fill from some old pillows that my mom no longer wanted. Once the pillows were stuffed, I hand stitched them shut, which resulted in this!

Trash to Treasure: Table

One of my favorite hobbies is to go thrift shopping (thank you Macklemore for making it cool again!).

When I was at Goodwill a while back I scored this gem for 7.99. It was a little worse for the wear, as it was missing its drawer-see the gaping hole?

Side note: My parents are all-stars for many reasons.

Example 1: See the board sitting on top of the table? They cut that down for me (read: I'm a giant chicken when it comes to power tools).

This is about the point where my documentation of this project fell apart, so please bear with my verbal description of what I did to that lovely table.

First, I sanded down the surface of the yellow table and the board, as there were a few spots that had paint drips. Once I had it sanded, I wiped it down with a damp rag **This step is so, so important, so that you don't seal in the dust!

I then went to Home Depot and got a few cans of their cheap-o, but still does the trick, flat black spray paint for $0.98 a can. 3 cans later, I had the whole table coated in black. Mom and I then tag teamed the adding of the board... it required more of my favorite things...power tools- thanks, mom :)

After that I went to Anthropologie and picked out a drawer pull, so that I could make the board that we added look like a faux drawer. The pull was the same price as the table, so the whole project cost me around $19, which is a WHOLE lot better than what a similar table would have cost me brand new- plus I was able to personalize it with the adorable pull :)

Happy Birthday, Dad!

Shopping for birthday presents (or any presents) can be pretty difficult. I always want to make sure I find something functional but not totally boring.

Enter: Pinterest.

Earlier this week I was perusing and stumbled on this little gem a.k.a. an adorable candy bouquet. Immediately I thought that it would be a perfect/fun gift for my dad.

I was convinced that just arranging candy in a fancy manner wasn't enough of a gift for my awesome dad. So after collaborating with my friend Melissa, I decided to stick a gift card to a restaurant in there.

I knew that I wanted to use Junior Mints to cover part of the base, so I measured a box of them first and then went on my way to JoAnn fabrics to purchase a styrofoam block used in flower arrangements.

Then I hit up Fred Meyer for LOADS of candy and BBQ skewers.

When I got home I busted out my hot glue gun (seriously, if you don't have one you NEED to go out and purchase one STAT). I then used the hot glue gun to attach the box candy (Junior Mints and Good & Plenties) to the styrofoam floral block.

After the block was finished, I hot glued all the other candies (and gift card) to their own BBQ skewer.

The next part was a little scary because I didn't want to end up with a billion holes in the styrofoam block- so I had to make sure that I carefully selected and placed each candy skewer.

Since the gift card was really the most important part of the gift, I chose to make the it the center of the arrangement,so I placed it first. I then carefully positioned the rest of the candy skewers in the styrofoam block- placing them carefully so they camouflaged the other skewers. Naturally, there were always going to be some showing, so I inserted tissue paper to do some more disguising.

To make a smoother transition between the box candy vase, and the skewer arrangement, I decided to hot glue a ribbon around the top of the boxes... I was going to add a bow, but I had great difficulty in creating one, so I decided to scrap it in the end.

Peach Crisp

Ali's Peach Crisp

Pie Crust
I used store bought, but you can certainly be more domestic and make your own.

Peach Filling
6 medium to large fresh Grossen peaches
2 tablespoons brown sugar
2 tablespoons flour

Great Grandma' Ella's Crisp Topping
1/2 cup softened butter NOT margarine
1 cup flour
1/2 cup brown sugar.

Instructions

1. Preheat your oven to 425 degrees.

2. Make crust or buy pre-made at the store and place in your pie plate.

3. Prepare peaches by peeling and thinly slicing them. ** If you have difficulty peeling your peaches, you can blanch them for 20 seconds in a boiling pot of water.

4. Make the filling using a large bowl and a rubber spatula, gently combine peaches, brown sugar, and flour

5. Using the rubber spatula, gently spoon the peach filling into the pie plate, on top of the pie crust.

6. To make the crumble combine brown sugar, flour, and butter in a small bowl. I usually use a pastry cutter but your hands will work fine too. Work the mixture until it forms clumps.

7. Evenly sprinkle the crisp topping on top of the peach filling

8. Place the pie plate on top of a cookie sheet and then in the oven. ** I usually cover my cookie sheet in aluminum foil for faster clean up.

9. Bake at 425 for 15 minutes to brown the crumble topping. Reduce oven temperature to 375 and cook for 45 minutes to an hour. Then let it cool on a wire rack 1 1/2 hours before serving.

Remix

Two years ago, my friend Stephanie and I embarked upon a baking adventure (read about it here) where we attempted to make one Barefoot Contessa (Ina Garten) baked good a week. Our very first week we made Beatty's Chocolate Cake .

At that point in my life had never baked a cake from scratch before and to be honest, I didn't think it would be that different from a box mix- mostly because I was anticipating a complete disaster.

We somehow managed to bake Beatty's Chocolate Cake to perfection. It was the best cake I had ever tasted. The downside to it was that it took quite a bit more time than a box mix.

_____

Last week, thanks to grad school, I was running short on time. So for my friend Jalah's birthday cupcakes I cheated (sorry Jalah!).

I took a standard box mix of cake...I think I used Pillsbury's Devil's Food Cake... But instead of putting in 1 and 1/4 cups water that it called for, I put in 1 cup of freshly brewed coffee and 1/4 cup of water in hopes of bringing out the chocolate flavor.

I then whipped up a batch of chocolate buttercream frosting to go on top of it.

Overall they tasted pretty good. But I think one day this summer is going to be devoted to creating a bunch of my own box mixes of Beatty's Chocolate Cake, so I'm ready to roll at a moments notice. It really is THAT much better.

Birthday Cupcake Toppers

One of my favorite people, Jalah, celebrated her birthday this past week. I decided to help her kick off the celebration in our grad school class by surprising her with cupcakes (more on those in a later blog post).

Cupcakes are pretty much the most delicious things around, and they are already pretty cute. But since you can have cupcakes on any old day, I thought Jalah's birthday cupcakes needed a little something extra.

In the past I have used stickers or foam cut outs on toothpicks to create easy cupcake toppers, but this time (with NO help from pinterest I might add) I decided to step up my game.

I started by typing up "Happy birthday!" TAB "Happy birthday!" ENTER as many times I could get it to fit onto one page. Then I picked a cute, but readable font and printed it.

Then I measured roughly a quarter of an inch out from each side of the "Happy birthday!" lines to mark how long I wanted them to be.

I then cut out on the pencilled lines and then cut between my "Happy birthday!" rows until they were just the perfect width. Next I folded those in half so that they could be glued on to fancy scrapbook paper.

I cut the fancy scrapbook paper to a desired width in strips.

Then I folded each in half and laid the "Happy birthday!" print over the fold to determine how long the scrapbook paper needed to be. Once I found my desired length I chopped into it forming a "v" to make a cute banner like look.

After this, I glued the "Happy birthday!" onto the scrapbook paper. Then the scrapbook paper to the top of a toothpick and laid it out to dry.

Back to School Finds: July 15-21

Back to school shopping is easily one of my favorite parts of the year. I love finding good deals for my classroom and students. Over the next month or two I will be sharing some of my favorite back to school deals on my blog. Here are the ones for this week. Happy shopping!

Fred Meyer

Scotch 5" Kid's Scissors for $0.99

** As a teacher, I always keep 3 small supply boxes for kids who need to borrow them- scissors are essential! I'm going to score 3 more pairs because ours have disappeared.

Binders: Buy 1 get 1 Free

Post-it Notes for $0.99

** Endlessly useful- this is a good deal. I love using mine in the classroom for "Parking Lots" and quick informal assessments. If you use them a lot, it's totally worth it to check out the monster packs at Costco.

150 Sheets of Filler Paper for $0.75

** I keep a class supply on hand at all time because we always seem to run out. This past year I scored a giant box of it for $5 at Goodwill. Love that place.

Spiral Notebooks 5 for $1

**You should wait on these- FM usually runs a 10 for $1 later in the summer. I purchase three colors for each of my kids and color code each subject. I'm only a little OCD.

Office Max

Just Basics Ball Point Pens for $0.25 a pack

** These pens come in blue, black and red. I always like to have a pack or two of these on hand to keep them in my "Pen" drawer for my students to use when they need.

Purell Mini Hand Sanitizer $0.10

** Love these minis! They are perfect for a purse, backpack, lunch bag, or whatever!

Target

3 Shelf Book Case for $14.99 after coupon

**Perfect for storing books in your classroom or home library! I have way too many books that I have loved from my undergrad and grad courses :)

ClosetMaid 6-Cube Wire Shelving for $19.99

When backpacks are stored on the backs of chairs it becomes difficult to move smoothly around the classroom. I decided to buy 5 sets of these and connect them for backpack and coat storage. Last year I added black dish pans so they could easily slide their stuff in and out.

Sewing: Coffee Cozy

Have I told you how much I LOVE pinterest? Since I joined last summer, I have had a lot of fun testing out new ideas. One of my super favorite finds was the coffee cozy via. It was really easy to make and was a great way to use up fabric scraps (which apparently I have way too many of). The creator designed an easy to follow and accurate pattern- which is sometimes hard to find on the internet. :)

Crafty Clipboards

To say I have an obsession with the website Pinterest, is a slight understatement. I love looking at all of the neat ideas on there AND being able to "pin" them to a spot where I can find them easily. Translation: I am able to remember exactly what they are because I have space to write a comment and see a photo.

Anyways, I was inspired by the Quick Clipboard Facelift done by Create Studio (check out their blog post HERE).

Here are the steps I took to beautify my clipboards:
1. Choose cute scrapbook paper
2. Lay your clipboard on top of the paper and use pencil to lightly trace around the edges.
3. Cut on the inside of your traced lines (You don't want to have excess, its a super huge pain to fix later in the process).

4. If the paper is going on the front, use a ruler to measure how far in and deep the clip goes so that the paper fits nicely around it.
5. Use Mod Podge, or something like it, and put a coat directly on to the clipboard.

6. Carefully place your cut scrapbooking paper onto the clipboard and use a food scraper to smooth out all of the bubbles.
7. Let it sit for a little while, and put another coat of Mod Podge of top of the scrapbooking paper to seal it all in.
8. Do both sides and let dry.

And there you have it, cute clipboards :)

Again, all images on this page are property of me, if you'd like to use them give me some credit :)

San Fran.

This summer has been approximately a million times fun, partly because I did neat things like travel (WHAT?). My adventuring took me down to San Fran.

I suppose I should start with I really don't like to fly, especially not by myself. But I did it, all the way to San Francisco (a whopping two hour flight). During the flight I mostly felt like I was super cool, I wasn't stressing out AND I was reading my favorite magazine (Real Simple) After we began our descent into San Fran, and were nearly to the ground, the pilot hooked the plane to the right, causing my to grab ahold of anything that was in my reach (fortunately there was no one sitting next to me). Once things got straightened out and the wheels were touching down, the guy behind me, loudly, says "MAN! If we would have been lower we would be a giant ball of fire right now." Naturally, I thought "NEAT!" not. (Remember this story for later blog post).

Anyways, I arrived in one piece to San Francisco, where I met my parents and our Austrian friends.

Here is a list of things that we did:

1. Chinese Food in Chinatown - super tasty.
2. Walked a ton, like seriously, everywhere.
3. Took a ferry out to Alcatraz
4. Did the audio guide tour of the island and its buildings- This part was probably my favorite part of the trip. It was super fascinating to walk around the place and learn about it.
5. While I was there, I bought a sign of Alcatraz's Regulation #30 to put in my classroom CLICK HERE. I bought it because I'm going to tell them about Alcatraz and do a related read aloud. I also purchased it because my students and coworkers know that our classroom does not follow this regulation, because loud learning is fun.
6. We went downtown and saw people climbing down the side of a super tall hotel for a fundraiser for the Special Olympics.

See them way up there?
7. We also adventured to the top of this hotel and took in some gorgeous views of the city.
8. Visited the Cable Car museum and learned how they work (SO NEAT).
9. Visited Ghiradelli Square and Fisherman's Wharf

Overall, it was a pretty epic trip, I love San Francisco and can't wait to go visit again!

Peace.

p.s. All images on this page are property of me, if you want to use them please ask and give me credit.

Long time no talk.

I have been the worst blogger on the planet!

Quick life update:

1. I started grad school and I'm totally loving it! I really enjoy learning (nerd).
2. A bonus of grad school is getting to see my friends 4 days a week (in class, but whatever)

My new project... starting soon is to create a gratitude journal, where I write down one (or more) thing(s) a day that I am thankful for.

I think it is going to be way rad, and if you are lucky, I might even share some of my thoughts with YOU!

ex.
I am thankful for my parents, they are such kind people that have helped me become the person that I am today. Thanks, Mom and Dad!

Time.

I think back to when I was an elementary school student and it always seemed as if the year was eons long. Now that I'm a "grown-up" (a term that I use loosely-mostly because I feel that it is rigid and boring) I feel that time passes far too quickly.

September marked the start of my first year of teaching where I purchased LOTS of things and set up my classroom. Today I tore all of that down and put it all into the same boxes that I felt like they just came out of. It was tough to do, mostly because I could hardly grasp how fast this year came and went.

Here are some things I learned through this far too short of a year:

1. This really is what I want to do with the rest of my working life (I hit that awkward post-grad phase where I thought "wow! I just spent a lot of money on a degree, what if I don't like it?" Fortunately for me, I found that it's a really swell thing to do everyday.

2. Send what you can to print shop because you probably will run out of copies. At which point you may need to talk one of your really amazing team teachers into letting you "borrow" some.

3. Flexibility is a must.

4. Think on your feet.

5. Laugh, a lot.

6. Enjoy them, save the cute notes, funny pictures, because some days when you feel overwhelmed with grading, or packing or whatever, you will look at them and laugh, smile or cry.

7. Set the bar high.

8. Ask your students about their events (boy scouts, swimming, soccer, running, etc). Try to attend them.

9. Take care of yourself, go to the gym (or not, like I did...)

10. Don't be afraid to ask questions. I asked a lot, and learned a lot from them.

11. Welcome lent items (but maybe make a list so you remember who to return them to).

12. Show your students you care, they care too.

13. Reflect, think about what you can do better next time, next minute, next day, next class, etc.

Okay, so I have a lot more, but this is all I want to share for now.

Keep it real.
